Ribs and Barbecue Sauce Recipe

For Ribs:
4 large racks baby back pork ribs (each about 2 1/2 lbs.)
8 T. chili powder, divided
1/2 c. chicken broth
2 T. soy sauce
For Barbecue Sauce:
3 T. extra virgin olive oil
3 garlic cloves, pressed
2 1/4 c. ketchup
3/4 c. chicken broth
3 T. soy sauce
6 T. dark brown sugar
4 1/2 T. light molasses
3 T. red wine vinegar

For Ribs:
Sprinkle each side of rib with salt and pepper and 1 T. chili powder. Arrange 2 racks on a rimmed baking sheet and pour chicken broth and soy sauce mixture around ribs on each sheet. Cover with foil and bake at 400º for 30 minutes. Reverse sheets and bake for 45 minutes longer until tender. Uncover, cool slightly and cut into individual ribs and brush generously with sauce. Place under broiler for a few minutes so the sauce caramelizes or finish off on the grill and add more sauce after.

For Barbecue Sauce:
Heat oil in a medium saucepan over med heat. Press garlic through a press and stir 30 seconds. Add all other ingredients and bring sauce to a simmer. reduce heat to medium low, simmer until reduced to 3 c., stirring occasionally, about 15 minutes. Transfer to bowl. Can be made 1 week ahead. Cover and chill.
