1 country ham (Clifty Farm)

1/2 cup brown sugar
1/2 cup corn meal

Directions:
Directions:
Cut off hock. Place ham in large pan and soak in cold water overnight. Remove and place in cooking pan and add fresh cold water and cook 20 minutes per pound at 300º - 350º. Take out of oven and pour off liquid. Skin while hot and remove most of fat. Combine brown sugar and corn meal and pat over ham where fat has been removed. Put back in 400 degree oven and brown. Be careful not to burn.

This is Paul's famous country ham. It is so delicious! This is wonderful for Thanksgiving or Christmas. I often have a request from my family to cook this ham.
