1 head cauliflower
1/2 cup heavy whipping cream (or milk or 1/2&1/2)
1/4 cup grated parmesan cheese
3 Tbsp butter, unsalted
1/4 cup sour cream (or plain yogurt)
1 garlic clove, minced
dash of nutmeg
dash of cayenne
salt and pepper to taste
minced chives for garnish

Steam or boil cauliflower until soft, drain. In a food processor add all the ingredients and pulse until pureed. Place back on stove and cook until hot. Top with chives.
