Ingredients: 2 - 8 oz. pkgs cream cheese (low or non-fat work fine) 1/3 c. powdered sugar 1 - 6 oz pkg dried cranberries 1 - 15 oz. can crushed pineapple, drained 1 c. chopped toasted pecans 1 c. shredded coconut 1 small (11 oz) can mandarin oranges, drained 8-9 toasted pecan halves

Directions:Mix cream cheese and sugar. Add cranberries reserving 1/4 cup. Stir in pineapple, chopped pecans and 3/4 c. of the coconut. Form into a ball or press into a pretty dish. Sprinkle with the remainder of the cranberries and coconut. Dump the mandarin oranges onto a paper towel to remove more liquid. Decorate the edges with the mandarin orange sections and whole toasted pecan halves.
Serve with vanilla wafers, ginger snaps, cinnamon grahams, or pita crisps. |

Notes: This makes a large amount and can be easily halved. You can also add other dried fruit, maraschino cherries, etc. to suit your taste. Makes a nice brunch item.
