1 (4 lb.) beef brisket
1 tsp. kosher salt
1 tsp. pepper, freshly ground
2 medium sweet onions (such as Vidalia), sliced into rings
1 (1.4 oz.) pkg. Knorr® French Onion Soup Mix
1 (14.5 oz.) can Swanson® Low Sodium Beef Broth
1 (12 oz) bottle of bock beer (such as Shiner Bock®)

Let brisket stand at room temperature for 30 minutes. Sprinkle both sides with salt and pepper. Spray slow cooker or crock pot with cooking spray. Add onions and sprinkle with onion soup mix. Add broth and beer. Place brisket on top of onions. Cover. Cook on low 9 to 10 hours or until brisket is tender. Remove brisket from cooker, reserving au jus. Place brisket on cutting board and let rest for 15 minutes. Cut into slices, cutting across the grain. Serve with onions and au jus.
