2 to 3 pounds beef sweetbreads
Flour to dredge
Water
1 small onion, chopped fine
Salt and pepper to taste
4 to 6 baked potatoes, one per person

Directions:
Directions:
Wash and remove as much of the thin membrane as you can without tearing them aprat. Dredge in flour and brown place in covered casserole. To the fryings add enough water so that meat is about 1/2 covered. Cut up the onion and put it in the bottom of the casserole. Put meat over it. Salt and pepper to taste. Bake at 350 degrees for one hour. Serve with baked potatoes. High in cholesterol, but also high in great taste!! Serves 4-6
