2 lb thin sliced boneless skinless chicken breasts
1/4 cup flour
salt
black pepper
juice of one lemon
1/2 cup white wine
2-3 tbsp capers (depending on taste)
olive oil to saute
butter to saute
1 tbsp butter for sauce

Directions:
Directions:
Mix flour with salt and pepper. Dredge chicken lightly in flour. Heat skillet and melt 1 tbsp butter with 1-2 tbsp olive oil, saute chicken in batches until lightly browned on each side over medium high heat, adding butter and oil between batches as needed. Remove to a platter and keep warm. When all chicken is cooked, add wine and lemon juice to skillet, cook until slightly reduced scraping up browned bits in pan. Add capers and cook 2 minutes. Remove from heat. Add 1 tbsp butter to sauce and swirl to melt. Pour over chicken and serve.
