Ingredients:
Ingredients:
1 jar marinara sauce or rotel diced tomatoes with green chile if you like it spicy
dry Italian sausage, sliced (casing removed if making it for Dad)
6-10 eggs
grated locatelli cheese

Directions:
Directions:
Preheat broiler, put rack in 2nd position (not too close to the heat)
Heat frying pan. Add sausage slices and let them warm. Add tomato sauce and bring to low boil. Crack eggs and carefully drop them one by one onto sauce. Poke through whites into sauce. When whites just start to turn white put pan in broiler. If handle is not oven safe cover it with foil. Broil until whites are cooked but yolks are still runny. Remove pan from broiler. Sprinkle with grated cheese. Serve eggs with tomato sauce.

Personal Notes:
Personal Notes:
I tried cooking completely in pan and also baking but found the yolks cooked too much before the whites were completely cooked. The broiler works best for me. A favorite "Tuesday Breakfast with Dad" and the kids when they are home from college.
