5 apples, peeled -- sliced
1 cup oil
4 eggs
1/4 cup pineapple juice
2 1/2 teaspoons vanilla
2 cups sugar
3 cups flour
4 teaspoons baking powder

Directions:
Directions:
Peel & thinly slice 4 - 5 apples (set aside). Mix in a large bowl everything but flour & baking powder. Can use orange juice instead of pineapple. Add flour & baking powder. Beat for 5 minutes.

Spray tube pan w/ PAM. Pour 1/2 batter into pan, put 1/2 of the apples on top of batter, spinkle w/ cinnamon -n- sugar. Pour remaining batter, then apples & cinnamon sugar.

Bake at 350 F for 1 hour or until toothpick is dry.
