5 1/2 oz (150g) plain flour
2 tbsp cocoa powder
1 tsp baking powder
1/2 tsp baking soda
4.5 oz (125g) dark soft sugar
2 tbsp golden syrup
5 fluid oz (150 ml) natural yoghurt
2 beaten eggs
4 fl oz (130 ml) sunflower oil
1 3/4 oz (50g) plain chocolate - just melted

Ganache cake icing:
3 fluid oz double cream
2 oz (60 g) dark chocolate

Pre Heat oven to 350ºF
Grease and line 8.5 inch/ 21-22 cm round cake tin (one with a loose base is best). Sift flour, baking powder, baking soda, together in a bowl. In a large jug mix all the rest of the ingredients together then add to the dry ingredients and beat for 2 minutes. Pour in baking tin and bake in preheated 350ºF oven for 30 minutes until firm to the touch(even in the middle). Allow to cool then carefully remove from the cake tin and cover with glossy ganache.

Ganache: Break chocolate in pieces and place in a small heavy pan with cream. Warm gently stirring all the time until chocolate has dissolved in the cream (do not boil) then allow to cool for a few minutes before pouring over the cake. Leave to set.

The Ganache is enough to cover the top of the cake, increase quantities if you want to cover the sides as well.

One of my favorite stops on our visits to the UK is visiting Auntie Kath and Uncle Mike Birchall, As all of Howard's family and friends, they extend their hospitality on us every visit. They open their homes and share wonderful stories and dinners with us. Auntie Kath always has a wonderful meal for us... always including a special dessert that she casually says. it was nothing to do!! Then she always shares some of her secrets of the kitchen and stories of Howard's Dad with me.
