1 lb white fish (cod, haddock)
1 cup carrots, finely chopped
1 stalk celery
1 large onion, finely chopped
1 cup frozen peas
1 cup mushrooms finely chopped
6 large Potatoes, peeled and cut into quarters)
1/2 lb grated cheddar cheese
salt
pepper
2 tbsp Wonder flour
1/2 pint Milk (for white sauce)
1/4 pint Milk (for mash potato)
1 tbsp Butter (for white sauce)
1 tbsp butter (for mash potato)
extra virgin olive oil


Directions:
Directions:
Boil Potatoes in salted water to make mash potatoes.

In large pan, saute together in oil the onion, mushrooms until clear. Then add, carrots and celery for 5 minutes, then add the peas for 5 minutes.

Microwave fish for 4 minutes to just cooked, then break into flakes.

While fish is cooking, prepare white sauce. Cook flour in the melted butter for 1.5 minutes in sauce pan to make a roux. Gradually add milk until you have a white sauce.

Take the vegetable mix, flaked fish, salt, pepper and put in a bowl and mix with hands. Add the white sauce and gently mix again. Transfer this into a high casserole bowl.

Prepare mash potatoes with butter, milk and pepper.

Spread mash potatoes over the vegetable. Sprinkle with grated cheddar cheese and bake in oven until cheese is melted and lightly browned.

This is dish Howard remembers as a boy. Recently, with his sister Julia on a visit to NJ, they recreated this dish some 30 years later. It is a family favorite.... an alternative to Shepard's Pie.
