Pre heat oven to 275º

Melt oil in a casserole until sizzling hot, coat meat in seasoned flour and brown the pieces on both sides till they're rich brown color. Take them out of the casserole and reserve on a plate.

Fry the onions to brown them well at the edges, then arrange the meat on top (plus any juices that are on the plate) and season with salt and pepper. next pour in the stout and Worchestershire sauce. Then put the lid on and transfer the casserole to the oven. Cook approx 2 1/2 hours or until the meat is tender.

Note: could braise the meat on top of the stove using a low heat but add 1 extra fl oz of stout . (never tried this method)
