Mix thoroughly:
1 cup soft shortening (part butter)
3/4 cup sugar
1 cup mashed cooked carrots
2 eggs

Sift together and stir in:
2 cups sifted flour
2 tsp baking powder
1/2 tsp salt
3/4 cup shredded coconut

Frosting:
2-3 tbsp butter
1 cup powdered sugar (may need more)
zest of one orange
juice from that orange

Directions:
Directions:
Drop about 2" apart on a lightly greased baking sheet. Bake at 400º for 8-10 minutes. Bake until almost no imprint remains when touched lightly with finger . Frost cooled cookies with Orange Butter Icing.

Frosting:
Mix first three ingredients until well blended. Add juice from the zested orange until you reach a spreadable consistency. You can add milk if needed to thin out the mixture.
