1/4 c. honey
1/2 c. splenda
1/4 c. margarine
1/4 c. brown sugar
1 c. applesauce
1 egg
2 c. oatmeal, processed in food processor to fine
1/2 c. oatmeal, whole
1/2 tsp. baking soda
1/2 tsp. salt
3/4 tsp. cinnamon
1/4 tsp. cloves
1/2 c. raisins (or craisins)
1/2 c. walnuts, toasted & chopped or sunflower seeds, toasted

Directions:

Stir together sweeteners, egg and applesauce. In a separate bowl, combine dry ingredients. Add the two mixtures together. Drop by spoonful onto a lightly greased cookie sheet. Bake at 375º for 10-12 minutes.

I tweaked a lot of batches of applesauce cookies until I came up with this low calorie cookie. The whole oatmeal, raisins and nuts add to the chewy factor and make it a satisfying cookie when you're trying to stay away from high calorie desserts.
