1 lb macaroni
4 T butter
4 T flour
Salt & pepper
2 C milk or cream (what ever you have)
3-4 C stock
12 oz white cheddar & monetary jack
4 oz of cream cheese
4 oz mozzarella
2-4 oz of either American, Swiss or provolone. or a combination
1 large hand full of grated cheese

Boil macaroni drain and set aside.Melt butter in large pot, add flour and cook for 2-3 minutes until bubbly. Add stock slowly stirring constantly. Add cheeses a little at a time melted and stirring until all the cheese is melted. Then add the milk slowly while stirring. Mix cheese sauce and macaroni in a greased baking dish. Bake at 350 for 30 minutes until hot, bubbly and slightly browned.

You can add pureed cauliflower to this as a substitution for some of the cheese. You can also put buttered bread crumbs on top before baking. This can be made with any cheeses that you have on hand any cheese that have been left over from cheese and crackers works well.
