1 tbsp butter
1 small leek, thinly sliced
1/2 cup white wine
1/2 cup clam juice
1/2 cup heavy cream
1 lb bay scallops
1 lb fresh fettuccine pasta
1/2 cup grated parmesan cheese
fresh thyme
salt
pepper

Directions:
Directions:
Add butter to saute pan on medium heat. Add leeks and cook until softened but not brown. Add wine and cook until reduced by half. Add clam juice and cream, bring to a simmer. Cook until reduced and flavors have combined. Add scallops and cook until done. Stir in cheese, season with salt, pepper and thyme.
Meanwhile boil pasta until al dente, drain reserving some of pasta water. Toss pasta in with sauce, adding water if needed to thin. Adjust seasonings and serve.
