Banana Bread Recipe

1/3 c. shortening
1/2 c. sugar
2 eggs
1 3/4 c. flour
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
1 c. mashed ripe banana
1/2 c. walnuts (optional)

Directions:
Directions:
Cream together shortening and sugar; add eggs and beat well. Mix dry ingredients; add to creamed mixture alternately with bananas, blending well after each addition. Stir in nuts.
Pour into well-greased 9x5x3 in. loaf pan.

Bake at 350º 45-50 minutes or till done. Remove from pan after 10 minutes; cool on rack. Wrap and store overnight. Banana bread is always better after it has been wrapped and stored overnight.

I got this recipe from a cookbook I got from mom at my bridal shower in 1971. I have been making this recipe since then. As time has progressed, I have gone from making this by hand to the Kitchenaid. Yay!
