5-6 pound beef brisket, trimmed
½ bottle liquid smoke
2 teaspoons celery salt
2 teaspoons garlic salt
2 teaspoons onion salt
¼ teaspoon black pepper
2 tablespoons Worcestershire sauce

BBQ sauce (recommend KC Masterpiece)

Directions:
Directions:
Cross two long pieces of wide aluminum foil across a large aluminum or glass baking pan (enough to fold over and completely seal brisket)
.
Trim most of fat from brisket and place onto foil.

Sprinkle with three salts, pepper, liquid smoke, Worcestershire sauce.

Seal and refrigerate 24 hours.

Bake for approximately 5 hours at 275F
.
Return to refrigerator and chill (freezes well at this point)

Once cooled, remove from foil and slice across grain. Apply BBQ sauce and rewarm.
