2 cup arborio rice
8 cups warm stock
1 diced onion
1 sm carrot diced
6 mushrooms sliced thin
1 clove minced garlic
4 tbsp butter divided or oil
salt and pepper to taste
3/4-1 cup grated cheese
chopped parsley Optional

Directions:
Directions:
Take 2 tbsp butter or oil and saute onion, carrots and mushrooms until soft. Add rice and lightly saute until golden. Salt & pepper to taste. Add warm stock a little at a time stirring often. Continue until the rice is cooked. About 25 -30 minutes. Right before serving add grated cheese and 2 tbsp butter and just mix gently. Sprinkle with chopped parsley at this time.
