1 (9 inch) unbaked, deep dish pie crust
1/4 cup butter
1/4 cup all-purpose flour
1 can cream of chicken soup
1 soup can of milk
1/4 tsp. pepper
1/4 tsp. poultry seasoning
1/4 tsp dried thyme
1 (8oz) package frozen mixed vegetables, thawed
1 1/2 cups chopped cooked chicken
1/4 cup Italian bread crumbs
1/4 cup grated Parmesan cheese

Directions:

Pierce pie crust with fork and bake at 350 for 10 minutes or until done. Melt butter in medium saucepan over medium heat. Add flour and cook for 1 minute. Add soup, milk, pepper, poultry seasoning, and thyme. Mix well. Add mixed vegetables and chicken. Bring to a simmer. Pour mixture into pie crust. Top with bread crumbs and Parmesan cheese. Broil for 5 minutes or until brown.
