Ingredients:  
One can of black beans, rinsed and drained
One can of corn, drained
Cherry tomatoes halved
One Avocado diced

Dressing:
4 tablespoons lime juice
2 tablespoons olive oil
1 tablespoon red wine vinegar


Directions:
Directions:
Mix first three ingredients and marinate with dressing (recipe to follow), add avocado prior to serving. Note: first three ingredients and dressing can be mixed for several hours before serving.

Serve as either a side dish with dinner or with tostada scoops chips as an appetizer.
