1 (32 oz.) jar sauerkraut, rinsed and drained
1/2 c. onion, chopped
1/4 c. snipped parsley
2 tsp. caraway seed
4 c. shredded Swiss cheese (16 oz.)
1 1/3 c. thousand island salad dressing
1 lb. thinly sliced cooked corned beef, coarsely chopped
6 slices rye bread, cut into 1/2 inch cubes

In a large mixing bowl, combine drained sauerkraut, onion, parsley and caraway seed. Spoon mixture evenly into an ungreased 13X9 baking dish. Layer with 1/2 half the cheese, half the salad dressing and all of the corned beef. Layer with the remaining salad dressing and cheese.

In a large skilled, melt butter. Add bread cubes and stir until coated. Sprinkle bread cubes over the top of the casserole. Bake in a 375º over for 35 minutes or until heated through and bread cubes are browned.
