2 cups egg whites, room temperature (approximately whites of 12-14 eggs)
1 cup sifted cake flour
2 cups sugar
1/2 cup cocoa
1 tsp cream of tartar
1 tsp vanilla

Directions:
Directions:
Beat egg whites and cream of tartar until they form a soft peak.
Gradually add in sugar.
Sift flour and cocoa together and then fold into the egg white mixture.
Add the vanilla.

Bake in ungreased angel food cake pan at 350º until it is dry around the center (approximately 45 - 60 minutes). Prior to baking, run a knife through the cake batter to take out air bubbles. Turn upside down to cool.

Frost as desired with Powdered Sugar Frosting,
Eat and Beat Frosting, or
7 Minute Frosting.

You can tell when egg whites have been beaten enough by turning the bowl upside down - egg whites should not slide out of the bowl.
