2 large cups of honey
8 cups (2 quarts) of sugar
2 cups flour
1/2 lb almonds, ground
1 tbsp soda
1/2 tsp ground cardamom seeds
4 cups whole milk
orange/lemon peel (citron if desired
20 cups of flour

Directions:
Directions:
Cook honey just to boiling.
Add sugar and boil again.
Remove from heat, add almonds and cardamom.
Alternate adding milk and flour gradually.
Stir until lukewarm.
Add soda dissolved into 1-2 tbsp of warm water.
Thicken with more flour (approximately 20 cups).
Chill dough until ready to bake.
Roll out dough like sugar cookies to about 1/4" thickness.
Cut out with floured cookie cutter or round glass.
Bake at 370º for approximately 8 minutes.
Store in tightly covered container - will keep for 3-4 weeks.
