3-4 lbs arm or rib roast
salt and pepper
potatoes and carrots, chopped onion if desired

Gravy
Flour, water, shaker

Directions:
Directions:
Put a little cooking oil in bottom of dutch oven.
Sprinkle roast with salt and pepper.
Sear roast very well on all sides.
Place a small rack if you have it on bottom of pan and place roast on the rack.
Add approximately 3 inches of water sprinkled with a little more salt.
Cover
Turn to low on top of stove.
Simmer for 3-5 hours.
Can add potatoes and carrots an hour before roast is done for a complete meal.

To make gravy:
Take roast, potatoes and carrots out of pan.
Use 1-3 tbsp of flour, put in shaker or jar with lid with some cold water.
Pour slowly in the cooking pan, cook until thickened.

If you need to leave the roast, you can put the potatoes and carrots in at the same time as the meat. To prevent overcooking, leave in larger pieces.
