2 1/2 cups unsifted flour
1 1/2 cups sifted powdered sugar
1 cup wheat germ
1/2 cup butter
1/2 cup shortening
1 egg - beaten
1/2 tsp salt
1/4 tsp nutmeg
1 Tbsp vanilla
1 Tbsp lemon juice

Filling-
1 cup dried apricots
1 cup water *little more if needed
1/2 cup sugar
1 Tbsp lemon juice

Directions:
Directions:
Combine flour, sugar, wheat germ,salt and nutmeg.
Cut butter and shortening into dry ingredients with pastry blender until it resembles fine meal.
Combine egg, vanilla, and lemon juice and stir into wheat germ mixture.
Shape into 2 flat patties, wrap in waxed paper and chill overnight.
Combine water and apricots in pan and cook until apricots are soft; mash apricots and add remaining ingredients.-cook until thick and cool.

Roll out dough on floured board to 1/8 thickness-cut in circles-place apricot filling in center of circle, place circle (with hole cut from center) on top and seal.
Bake on lightly greased cookie sheet for 12-15 minutes at 375º.
