1 cup butter
1 1/4 cup brown sugar
1/3 cup sugar
2 eggs
1 tsp vanilla
1 tsp coconut extract
1 tsp salt
1 1/2 tsp baking soda
3 cup flour
1 - 12oz pkg chocolate chips
1 1/2 cup toasted coconut **

Directions:
Directions:
Preheat oven to 350 F. Cream together butter and sugars until light and fluffy. Add in eggs, mixing well. Add in vanilla, coconut extract, salt, baking soda and flour. Mix until combined. Add in chocolate chips and coconut. If desired, add in 1/2 to 1 c chopped macadamia nuts. Drop by tablespoonful and bake for 10-12 minutes or until golden.

** To toast coconut, place on a cookie sheet and place in oven while preheating for just a few minutes. It burns easily. Cool completely before adding to cookie mixture.
