3/4 cup fine dry bread crumbs
1 tbsp chopped parsley
2 boneless chicken breasts, split and pounded (about 1 lb)
1/4 cup Egg Beaters
1 clove garlic, crushed
3 tbsp margarine
1 lemon
1/4 cup low-sodium chicken broth

Directions:
Directions:
Mix bread crumbs and parsley.
Dip chicken pieces into egg beaters, then coat with bread crumb mixture.
In skillet, over medium-high heat, cook garlic in margarine for 1 min.
Add chicken and brown on both sides.
Cut half the lemon into thin slices; arrange over chicken.
Squeeze juice from remaining lemon half into chicken broth; pour into skillet.
Heat to boil; reduce heat.
Cover & simmer 10 min or until chicken is tender.
