2 cups organic quinoa
black olives
mint
ripe red tomatoes or water
sundried tomatoes
fresh feta cheese
olive oil
lemon
spring lettuce

Directions:
Directions:
Soak overnight. Rinse again.
Bring to boil, turn off heat, & let rest for 45 minutes.
Arrange greens on large plate.
Mix feta & olive oil into cooked quinoa.
Place over greens adding olives, feta, & tomato.
Squeeze lemon over and the mint on top.
