2 cups sugar
1 1/2 cup salad oil
4 egg yolks
1 1/2 cup grated carrots
2 1/4 cup flour
2 1/2 tsp cinnamon
1 1/2 tsp baking soda
1 1/2 tsp nutmeg
1 1/2 tsp salt
1 cup chopped nuts
4 egg whites, stiffly beaten
3 3/4 tsp hot water

Directions:
Preheat oven to 350º. Add oil to sugar and mix well. In another bowl, beat egg yolks. Add hot water and carrots. Add to the first mixture. Sift flour, spices, baking soda, and salt. Add to egg mixture. Add nuts. Fold in stiffly beaten egg whites. Bake in stem pan for 1 1/2 hours
