1 c. watercress
1/4 c. parsley
1/4 c. shallots chopped, or substitute 1/4 c. chopped green onion
1/2 clove garlic, chopped.
1/2 tsp dill oil or 1/ 1/2-2 tsp chopped fresh dill
1/2 tsp basil oil or 1 1/2 or 2 tsp chopped fresh basil
1/2 c. mayonnaise
1 tsp Dijon mustard
1/8 tsp curry powder
1/8 tsp cayenne pepper
salt to taste

Directions:
Wash and remove stems from watercress. Chop fine with parsley and shallots (and dill and basil, if using fresh). Combine chopped mixture with remaining ingredients. Taste for seasoning. It should be very flavorful and almost over-seasoned.
