1 stick butter
2 c. thinly sliced green onions
3 T flour
5 c. chicken stock
3/4 lb fresh mushrooms
1 c. heavy cream
1/4 c. dry sherry
freshly ground black pepper
salt

Directions:
Directions:
Melt butter in large saucepan. Stir in onions, cover and simmer over low heat for 20 minutes. Be careful not to let the onions brown. Stir in the flour and cook for 1 minute. Pour in the stock and bring to a boil. Finely chop 1/2 lb of the mushrooms and add to the stock. Reduce to a simmer and cook, partially covered for 10 minutes. Puree in a food mill or blender, return to the pot, and stir in the cream and sherry. Taste and correct for seasoning. Thinly slice the remaining mushrooms. Place the sliced mushrooms on the bottom of a large tureen or individual serving bowls and pour the hot soup over them. Serve at once. Serves 6 to 8.
