Large Cucumbers
1 gallon water
1 C. lime juice
1 quart vinegar
5 1/2 C. sugar
1 1/2 Tbsp. salt
1 tsp. whole celery seeds
1 tsp. mixed pickling spices
green food coloring

Directions:
Peel large cucumbers, cut in half and hollow out soft seed part and cut into strips. place in roaster pan and cover with one gallon water. Add one cup lime juice, let stand over night . Next day, drain the lime water off and soak in tap water for 3 hours. while soaking, mix other ingredients together in another pan and bring to a boil, stir constantly. Vinegar, sugar , salt, celery seed and pickling spices. add green food coloring to boiling mixture. Drain off tap water from cucumbers, pour boiled solution over them, place on stove, simmer for 30 min. fill fruit jars while cucumbers are warm so they will seal well.
