2 c. buttermilk
2 c. flour
3 eggs
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 tsp. sugar
1/2 tsp. lemon extract

Directions:
Directions:
Beat egg yolks; add sugar, salt & buttermilk. Sift the flour, soda & baking powder together. Add the first mixture. Stiffly beat the egg whites, and fold into the mixture. Take the aebleskiver pan and place a small amount of butter or margarine in each cup. Heat pan and fill each cup 2/3 full of dough.
Cook until bubbly, then carefully turn them over with a toothpick or fork and finish baking them on the other side.
Serve with applesauce or for a treat with the children, serve with small dish of powdered sugar.
