8 medium zucchini, shredded
6 eggs
1 large onion
1 ˝ c Parmesan cheese
1 tbsp garlic
salt and pepper to taste
2 tbsp oil
2 c Bisquick

Directions:
Directions:
Sauté zucchini, onion, and garlic in oil till soft. Pour into large mixing bowl. Add eggs, Parmesan cheese, salt, pepper, and Bisquick. Mix well. Fry like regular pancakes in heated oil until brown on both sides and firm in the center.
