4 T. olive oil
1 large onion, chopped
4 cloves garlic, chopped
1 tsp. hot pepper flakes, or to taste
1 1/4 tsp. salt
4-6 potatoes, diced into 1/2 cubes
3 cups coarsely copped kale
fresh ground black pepper

Directions:
Directions:
Heat oil in a soup pot; add onions, garlic, hot pepper flakes and salt. Saute until onions are translucent. Add potatoes and enough water to cover by 4 inches. Bring to boil and cook, covered, until potatoes are tender (10-15 minutes). Puree soup in pot with wand blender until just smooth. Season with pepper to taste. Serve with warm bread.

Personal Notes:
I like using the smaller yellow potatoes for this recipe. If they are organic I don't peel them. If you don't have a wand blender you will have to use a regular blender or a food processor. The wand blender is my favorite appliance in the kitchen!
