6 lbs. beef short ribs
salt and pepper

Directions:
Directions:
Heat oven to 500º. Pour about 1 cup of water into a roasting pan. Put the short ribs, fat side up, on a rack in the roasting pan and sprinkle them with salt and pepper. Roast 20 minutes. Reduce the oven temperature to 300º and continue roasting until the short ribs are tender, about 2 hours 30 minutes longer.
