2 Tbsp. vegetable oil or olive oil
1 rack port baby back ribs, cut into individual ribs
salt & pepper
1 medium onion, chopped
6 medium, white new potatoes, quartered
1 lb. bag sauerkraut
1/2 C. water or stock

Directions:
Directions:
Heat the oil in a Dutch oven over medium-high. (it can also be cooked in the oven at 325º )

Season the ribs with salt & pepper. Lay ribs in the Dutch oven and sear them in a single layer. Transfer them to a platter. Add the onions and saute until softened, scraping up any browned bits from the ribs. Add potatoes. Add ribs back in and cover with sauerkraut. Pour water or stock over top. Cover the Dutch oven and lower the heat. Simmer the pot on the stove for 2 or 3 hours, until ribs are tender. If it gets dry at any time, add chicken broth or water to keep moist.
