1 can beets
2 t. cornstarch
salt, pinch (to taste)
1/4 c. sugar
3/4 c beet juice
1/4 mild vinegar

Directions:
Directions:
Drain can of beets preserving juice. Cut beets into small strips. Into saucepan stir together cornstarch, sugar and salt.
Add beet juice and vinegar. Cook until thick, stirring often. Add beets and lump of butter to heat through before serving.
