4 c. cooked mashed sweet potatoes. 1 tsp vanilla. 1 tsp nutmeg. 2 c. sugar. 1 stick oleo. 3 eggs Biscuit or pie dough.

Directions:
Directions:
Boil and mash potatoes. Add remaining ingredients. Roll dough thin and cut dough (around saucer) Dab potato mixture on one side of dough.
Fold over, using fork crimp edges together. Brown on both sides in skillet with cooking oil. Drain on paper towels.

Small flour tortillas can be used, but will not be as good, especially after stores a while. Also, don't miss the fried pie crust recipe here in the book!
