Ingredients: 3 Tbs. olive oil 3 onions, chopped 1 Tbs. each of chili powder & cumin 1/4 tsp. cayenne pepper 2 peppers (green, red, yellow or a combination), chopped 3 garlic cloves, chopped 3 Tbs. unsweetened cocoa powder 1 large can undrained tomatoes, chopped 1 cup water 1 can red kidney beans, rinsed & drained 1 can black beans, rinsed & drained 2 cups fresh or frozen corn 1/2 cup bulgur, mushrooms or veggie crumbles salt & pepper, (to taste) avocado and/or fresh cilantro, chopped

Directions:1.In a large pan, saute the onions, spices, and mushrooms or veggie crumbles (whichever you are using). 2.Add peppers and garlic and saute for 1 minute; add cocoa, tomatoes, and water. 3.Bring to a boil, then add kidney and black beans, corn, and bulgur (if using). 4.Reduce heat to low and simmer, uncovered, for 15 minutes; add salt and pepper to taste. 5.To serve, top with avocado slices and/or sprinkle with cilantro. |

Notes: We discovered recently that we really like a good chili. Just not too hot! Dad introduced us to the basic bean and beef stuff... but Mom introduced us to this Ultimate Veggie delight!! Her family comes from India and are primarily vegetarian. They also tend to like a little extra kick in their food. This chili fits the bill for both - but not overly so. Yum!
