4 T. butter
1 T. minced onion
3 eggs
1 lb. cheddar cheese, shredded
1 c. GF flour
1 c. milk
1 tsp. baking powder
pinch of salt
2 (10-oz)pkg. frozen chopped spinach, thawed and drained

Directions:
Directions:
Preheat oven to 350º. Put butter in a 9 x 13 pan and melt the butter in the oven. In a large bowl, beat the eggs well, then add flour, milk, salt, and baking powder. Mix well. Add cheese, spinach, and onions. Mix. Spoon the mixture into the buttered baking pan and bake for 35 minutes. Cool slightly before cutting and serving.

Squeeze out as much water as possible before adding it to the other ingredients. This dish freezes well. To serve after freezing: defrost and reheat 325º for 12-15 minutes.
