Ingredients:  
1 quart cooked squash, drained (4 lbs squash)
1 egg, beaten
salt and pepper
2 cups shredded sharp cheddar cheese
1 stack Ritz crackers, crumbled
2 or 3 Tbsps margarine

Directions:
Directions:
Pour squash mixture and cheese in a 2 quart casserole dish and top with the crumbled crackers that have been combined with the margarine. Bake at 350º for 30 minutes.

For smaller casserole (1 1/2 quart), use 1 egg and 1/2 of other ingredients and 3 Tbsps of margarine combined with 1/2 stack crumbled crackers.
