2 quarts beets, cooked, cooled, peeled and sliced
2 c. white vinegar
2 c. sugar
1/2 tsp. salt per pint

Directions:
Directions:
Boil 2 c. vinegar and 2 c. sugar; place sliced beets in pint glass jars to 1/2" from top; add 1/2 tsp salt if desired, cover with boiling syrup leaving 1/2" space at top. Clean jar rim and process in boiling water bath with water to cover top of lid for 30 minutes. Remove and place on towel for cooling.
