Directions:Two Options on making this.
#1. In a large skillet brown sausage. Remove and set aside sausage when done. Put 1/4 c. oil in pan with 1/4 c. flour over medium-high heat until bubbly. You want to let this bubble/boil for a minute or longer. Then start adding the milk. Add slowly, starting and stopping as you stir in the milk so it doesn't clump up and stays smooth. The recipe says 5-6 cups of milk but really just pour slowly until you have the desired amount of gravy you want to end up with.
After this thickens add your sausage and mix together. Serve with your biscuits.
#2 way is a faster way. Brown the sausage in a pan. Leave meat in the pan and sprinkle 1/4 cup of flour over the meat. Mix together. It will be very thick. Let the meat and flour mixture heat for a minute or longer. Start adding your milk to this slowly and it will thicken up very quickly. |

Notes: It might seem obvious to the experienced cook how to make gravy or something this simple. But I can not believe how many women I run into that don't know how to get white sauces/gravy to thicken. So I wanted to make sure this was written down in this cookbook!
