6 pounds pork rib
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon tumeric
1/4 teaspoon celery seed
1/8 teaspoon dry mustard
1/2 cup catsup
1/2 cup brown sugar
3 tablespoons soy sauce
1 tablespoon fresh ginger root, GRATED
1 clove garlic, MINCED

Thoroughly rub the ribs with mixture of sugar, salt, paprika, tumeric, celery seed and dry mustard. Cover and let stand for 2 hours. About an hour before cooking time, soak hickory chips in water in covered grill. Place slow coals on both sides of drip pan. Sprinkle coals with hickory chips. Place ribs bone side down on grill; lower grill hood. Grill ribs over slow coals about 30 minutes. * Turn meat and grill about 30 minutes more. Sprinkle coals with chips every 20 minutes. Combine in saucepan: catsup, brown sugar, soy sauce, giner and garlic. Cook and stir until sugar is dissolved. Use to baste ribs.

* You may also slow smoke them for 4 - 6 hours in a 275 degree smoker
