1 1/2 lb cooked ground beef OR 2-3 cooked cubed chicken breasts
1 chopped onion
1 16 oz can refried beans
1 tsp salt
1/8 tsp garlic powder
1/3 c taco sauce
2 10 oz cans enchilada sauce
12 corn tortillas
shredded cheddar cheese
black olives
sour cream
salsa

Directions:
Directions:
Brown beef with onion until onions are tender. OR saute onions and add chicken. Drain off excess grease from browning beef. Stir in beans, salt, garlic powder, taco sauce and olives with chicken or beef. Heat until bubbly. Pour 1/2 enchilada sauce into ungreased shallow baking pan (9x13). In a small frying pan heat salad oil about 1/4 inch thick (deep). Dip tortillas one at a time to soften and drain. Place 1/3 cup filling on each tortilla; roll to enclose the filling. Place seam side down in baking dish. Place all in 9x13 pan, pour remaining enchilada sauce on top and cover with shredded cheese. Bake uncovered at 350 for 20-25 minutes til heated through. Top with sour cream and salsa. Serves 4-6 people
