1 lb salted butter - *clarify
1/2 c. powdered sugar
1 egg yolk
1 tsp almond or vanilla flavoring
3 c. cake flour - sifted
3 c. powdered sugar - for coating

Directions:
*Heating butter to boiling on low heat. Skim foam as it heats. (The peel of one lemon may be added to butter while it is being boiled and other flavors may be omitted). Remove boiled butter from heat and allow to cool at room temperature for several hours. Refrigerate, preferably overnight. Skim off all salt that has settled on top and bottom of now solidified butter. Remove any liquid that has settled.
Whip butter with mixer until white. Add sugar and blend well. Add egg yolk and flavoring and beat well. Add flour by hand to make soft dough. chill dough at least one hour. Pinch off small pieces of dough and shape into balls, crescents or horseshoes. Bake on ungreased cookie sheets for 20 minutes at 350º. Do not allow to brown. Remove cookies carefully from cookie sheet as these are very soft and will crumble easily, and place on waxed paper coated with powdered sugar. Sift powdered sugar over all, coating heavily.
