1 c. (2 sticks) unsalted butter
1 c. sugar
1 c. light brown sugar
3 lg eggs
1/2 tsp vanilla extract
3 c. all-purpose flour
2 tsp salt
1 tsp baking soda
1 lb good-quality bittersweet chocolate, coarsely chopped

Preheat oven to 325º. Grease several baking sheets or line with parchment paper. Cut the butter into slices and melt in a saucepan. Remove from heat and add sugars, eggs and vanilla. Beat with a spoon until combined. Meanwhile, combine dry ingredients. Add to wet mixture and beat to combine. Add chocolate. Cover and refrigerate at least 2 hours. Drop scant amounts of cookie dough onto prepared baking sheets, spacing them 1 1/2 in apart. Bake cookies for 15 to 18 minutes, or until golden brown.
