One Salmon Filet, skinned (2lbs for 4 people)
6 romaine tomatoes, diced
4 large fresh garlic cloves
1 c. sliced fresh mushrooms
1/3 c. white wine
1/3 c. clam juice
1/3 c. olive oil
half of a fresh lemon
1/4 c. fresh chopped chives
2 T. capers
1 package linguine noodles

Directions:

Cook noodles, follow the package direction.

Cube the salmon into bite size pieces, and then season with salt & pepper.

Place a large pan on medium high heat. Pour olive oil in pan, with crushed garlic and then place salmon in pan. Turn pieces until all sides are pink (do not cook salmon all the way through). Remove salmon from pan and place in a bowl until later.

Now add tomatoes and mushrooms in same pan and saute' for about 5 minutes, then pour wine, clam juice and fresh squeezed lemon for about 3 minutes. Turn down to medium heat, place salmon back in pan (you can at this time add any of your favorite spices; mine is lemon pepper and flakes of red pepper, this is where you can get creative) and simmer for about 5-7 minutes. Turn heat off and place capers and chives in pan.

Drain noodles then mix everything together in a big pasta bowl and serve with Parmesan cheese.

This dish goes well with ceasar salad and garlic bread. It's even better the next day.
